If I want to lose some weight I normally reduce the amount of carbs in my meals. This spinach couscous salad is delicious, very healthy and has a very low- carbohydrate content. If you are a vegetarian you can have tofu with the salad instead of chicken. It’s very easy to make and ready in less than half an hour.
Spinach Couscous Salad ingredients (2 servings)
Chicken
- 2 Chicken breasts
- salt, pepper, cumin, paprika, garlic powder
- coconutoil
Salad
- 100 g couscous
- 8 cherry tomatos
- 100 g mozzarella cheese in small pieces or feta
- 300 g spinach
- 30 g pine nuts
- 1 bouillon/stock cube
optional: parmesan cheese
Spinach Couscous Salad instructions
Rub the seasoning onto both sides of the chicken breasts. Brown the chicken in the hot coconut oil on both sides until golden, about 3 to 4 minutes on each side. For the last 2 minutes you can roast the pine nuts with the meat.
In the meanwhile you can stir fry the spinach and add boiled water to the couscous in a bowl with 1 bouillon/stock cube. Cover the bowl and let it sit for 10 minutes. If the couscous hasn’t absorbed the water or still tastes crunchy after this time, cover and let it sit for a few more minutes. If there is still to much water, let it drain.
Cut the cherry tomatoes in half and put it into a salad bowl. Also add the mozzarella pieces, spinach, couscous and the roasted pine nuts. You can finish it with a little bit of grated parmesan cheese.
Now you can serve the salad with the delicious juicy chicken! Enjoy your meal.
