Egg muffins

I really love eggs, they’re delicious, healthy and very easy to make. There are more than 365 ways of cooking eggs and the egg muffin is one of them! It’s really easy to make, it doesn’t cost much time and you can take it with you to work or school. And besides that, they are really healthy, delicious and rich of protein.

Egg muffins recipe ingredients (6 muffins)

  • 3 egg whites
  • 2 egg yolks
  • 50 g grated parmesan cheese
  • 1 red onion
  • 1/2 red sweet pepper
  • 1/2 yellow sweet pepper
  • 1 tomato
  • 5 mushrooms
  • 6 slices turkey or chicken
  • salt and pepper

Egg muffins recipe instructions

Preheat the oven to 200 C or 400 F. Cut the onion, sweet peppers, tomato and mushrooms into very small pieces. Mix the egg whites and yolks into a mixing bowl and add salt and pepper. Add all the vegetables and mix till it’s blended. Use a cupcake or muffin tin and lightly spray or wipe the tin with coconut oil. Put in every whole a slice of turkey or chicken and fill it with the egg batter. Finally add some grated parmesan cheese on top. Put it in the oven for 20 minutes and it’s ready!
