Sometimes I really don’t want to eat more baked/cooked eggs or plain chicken to get enough protein. I’m always trying to find new recipes to have a very varied diet. Especially because I don’t like fish. Last week I made this chicken salad and it is really delicious and easy to prepare. You can put it on a cracker, a sandwich or wrap.

Chicken salad recipe ingredients

  • 300 g skinny chicken breast (without skin)
  • salt and pepper
  • fresh chive
  • 2 tbsp greek yoghurt
  • 1 tea spoon lemon juice

Optional: rucola/arugula

Chicken Salad recipe instructions

Cook the chicken breasts in water till it’s done. Cut the chicken breast into smaller pieces and put it in the kitchen machine. Blend till the chicken is chopped into small pieces. Add  yoghurt, lemon juice, salt and pepper and mix until just combined. Cut the fresh chives into very small pieces and fold it into the chicken salad mixture. Very important! Taste it! If it needs more flavor, add more salt and pepper. I really think arugula is amazing to combine with this chicken salad, just try it.
